This lot originates from the southern region of Chiapas, Mexico, where the mountainous terrain offers the perfect combination of altitude and climate for cultivating specialty coffee.

The majority of farms in this area are small, typically family-owned plots of land, each spanning less than 10 acres in size. Coffee beans are sun-dried on patios or, when necessary, in mechanical dryers called guardiolas.
